People who keep Kosher and are also foodies have a breakfast problem. Specifically, we can combine eggs and meat, and we can combine eggs and cheese and butter, but we can’t combine eggs and meat and cheese and butter. Are you getting where I’m going with this?
This dish is a take on the classic green beans and sausage casserole. It’s bright and fresh, and might make a great breakfast for someone who doesn’t keep Kosher. For the rest of us, though, I’m suggesting Sunday night dinner or appetizer for a yom tov meal. It’s really excellent, and the black pepper is the perfect flavor enhancer. Let me know what you think!
INGREDIENTS
- 1 lb. green beans, washed and trimmed
- 16 oz. spiced beef kielbasa (two sausages), quartered lengthwise and sliced in 1/3 inch pieces
- 2 tbsp. olive oil
- 1.5 tsp. freshly ground black pepper
- 4 whole eggs
- 1 tbsp. white vinegar
- 1 pinch fleur de sel or sea salt, to taste
INSTRUCTIONS
Green Beans and Kielbasa
- Heat large skillet (12”+) or wok over medium high heat.
- Add olive oil, allow to heat until shimmering.
- Add kielbasa pieces to the pan. Cook, stirring constantly, until kielbasa brightens in color and begins to brown at the edges (approximately 4 minutes).
- Add green beans and pepper. Cook, stirring constantly, until green beans are bright green in color and still crunchy (approximately 2 minutes).
- Remove from heat. Split the green beans and sausage into 4 servings, and arrange on individual plates.
Poached Eggs
- Fill a small saucepan with approximately 4” of water.
- Add vinegar.
- Bring to boil over high heat, then reduce to low simmer.
- Crack one egg into a shallow bowl. Lower the bowl close to the top of the simmering water, and carefully slide the egg into the water. Allow a few seconds for the egg to begin to set.
- Add additional eggs to the water, allowing each egg to set slightly before adding the next.
- Leave each egg in the water for exactly 4 minutes.
- Remove each egg with a slotted spoon, and place on top of the green beans and sausage.
- Sprinkle each serving with fleur de sel. Serve immediately.

I am not clear, though about the placing eggs part. They go into the water or in a bowl in the water? I would love to see a picture of that part.
Sounds like an interesting appetizer for Friday night ( hint)
